Aish Al-Saraya

There is, however, a very similar desert called aish al-saraya or "bread of the mansion." In it, bread is soaked in a syrup mixture until soft and moist, and served cold with a big dollop of clotted cream ('ashta) on top. I always think of 'aish el saraya, sometimes translated as Middle Eastern bread pudding, as Egyptian, but you're just as likely to find it in Lebanon or elsewhere. The bread crumbs are moistened with syrup but not made heavy with butter, and the cheese is not stringy but a light and fluffy whipped ricotta. It's layered like kunafe but served cool, not warm, and very easy to make ahead of time.

ingredients:
1.      Cake:
2.      1 Cup Flour
3.      1/2 Cup Farina
4.      1/2 Teaspoon Salt
5.      1 1/2 Teaspoons Baking powder
6.      1/2 Cup KDD Butter, soft
7.      1/2 Cup Sugar
8.      2 Large Eggs
9.      1/2 Cup KDD Milk
10.  1 Teaspoon Vanilla
11.  Caramel syrup:
12.  1 Cup Sugar
13.  1/2 Cup Water
14.  1 Tablespoon Lemon juice
15.  1 Tablespoon Rose water
16.  Topping:
17.  1 250 ml pack. KDD Thick Cream
18.  1 Tablespoon Rose water
19.  Pistachios
20.  Toasted Almonds

preparation:
1.      Bake 20 - 22 minutes until cake is dry and top is golden. Cool to lukewarm.
2.      Spoon the warm caramel syrup on cake. Leave to cool.
3.      Topping: Mix KDD Thick Cream with rose water. Spoon on top of each cake and sprinkle with nuts. Serve.
4.      Caramel syrup: In a small casserole heat sugar until melted and brown in color Add water, lemon juice and rose water, simmer 1-2 minutes.
5.      Heat oven 180C. Bring 6 - 8 mini oven dishes or thin ramekins. Butter generously, set aside.
6.      Cake: Sift flour, farina, salt and baking powder. Set aside.
7.      Beat KDD Butter and sugar until light and fluffy. Add one egg and beat until mixed well, add the other egg and beat well.
8.      Add flour mixture, KDD Milk and vanilla; beat for 1 minute until cake batter is smooth.
9.      Divide among the oven dishes.
