Ingredients:
12 Kiri squares
¾ cup white sugar
3 gelatine sheets
½ tbsp lemon juice
2 fresh mangos
1 ¾ cup whipping cream
Ingredients for the base:
1/4 cup sticky dates (seedless)
5 cups white flour
½ cup ghee
½ cup corn oil
½ tsp ground cardamom
2 tbsp saffron Ingredients for topping

Directions:
Mix the sugar and Kiri squares for ten minutes. Then add the lemon juice and the mangos (smashed into a puree). Then add the gelatine followed by the whipping cream.
To prepare the base:
Fry the white flour till brown, remove from pan and set aside. Place the sticky date in a mixing bowl and add the flour while it is still hot. Sprinkle with cardamom and saffron. Then pour the ghee and corn oil over the mixture. Mix well until the flour, dates and ghee are combined thoroughly.
Place the base mixture on the bottom of the ring, then fill with the mango – Kiri mixture for half of the ring. Then make another thin layer of the base mixture and finally fill up the ring with the remaining mango – Kiri mixture. Then put in a freezer for two hours until it gets set.
To prepare the topping:
Boil the mango puree and mix it with the gelatine. Then pour it on top of the mixture and keep in a freezer for one hour until it gets set and is ready to serve.
