Beef Fajias



Cuisine: Mexican
Serve: 5 persons
Preparation time: 25 minutes
Cooking time: 10 minutes

Ingredients
for the beef fajitas mixture:
2 tablespoons olive oil
500 g beef fillet, cut into thin strips
1 medium onion or 150 g, sliced
1 small red capsicum pepper or 100 g, sliced
1 small green capsicum pepper or 100 g, sliced
2 cubes MAGGI Chicken Bouillon, dissolved in ¼ cup or 60ml of hot water
½ teaspoon ground cumin
½ teaspoon ground black pepper
½ teaspoon dried oregano
½ teaspoon mild paprika
½ teaspoon chili powder
½ teaspoon ground coriander

Other ingredients:
1 medium avocado pear, ripe, mashed
½ teaspoon garlic, crushed
¼ teaspoon ground cumin
½ cup labneh or 100 g
10 loaves flour tortilla
1½ cups lettuce or 100 g, leaves separated and finely shredded

Preparation
Warm olive oil in a large non-stick pan, add and cook beef strips until they are brown and cooked. Add onion, green and red capsicum. Stir for 3 minutes then add the dissolved MAGGI Chicken Bouillon cubes and spices. Simmer for another 3 minutes or until mixture is almost dry and little moist.
Combine mashed avocado, garlic; cumin and Labneh in a small bowl (add salt to taste). Spread a spoon of avocado mixture over warm tortilla bread; add some lettuce and some of the beef fajitas mixture. Roll to enclose and serve
